We had earlier lamented that we'd have to wait until May for Frank Gotti's magnum opus, The Gotti Diet — and, like manna from heaven, an uncorrected manuscript arrived at our door just a mere day later. As such, it's time for a very special Frank Gotti Book Club, in which we'll preview unpublished gems, taken from the book at random. Today's passage:

If you go into an unfamiliar Italian restaurant, go lean and green. Ask if that piece of veal or chicken can be broiled, with a brush of olive oil, no butter. Chicken Francese is sautéed and flavored with fresh lemon juice. Can it be sautéed without a lot of oil? What about a Caesar salad with grilled pesto chicken or grilled salmon?



If you really can't bear the idea of depriving yourself of Spaghetti Bolognese, ask for a half order or child's plate, then fill up on salad.
